They say exceptional old vine fruit was sourced from the famed Ebenezer sub district at the northern tip of the Barossa Valley.
These vines are no spring chickens, with ages ranging from 50 to a whopping 130 years old! To ensure the best quality, our winemakers carefully fermented this beauty in 1- and 2-tonne open fermenters, giving it a good ol’ hand-plunge not once, not twice, but three times daily.
After that, it was left to mature for a cozy 16 months in 100% new oak hogshead barrels, with 95% French and 5% American oak for a little international flair.
We even kept it on lees and decided to skip the filtering process before bottling to capture every ounce of its character.
