Chichibu is probably the closest Japan has to a craft Whisky distillery.
Ichiro Akuto has just 14 employees and two small copper pot stills (designed by himself and made by Forsyths in Scotland).
The eight, 3,000-litre washbacks—made from Hokkaido Mizunara oak—produce ten batches per week, resulting in approximately 60,000-litres of new-make.
This is a drop in the ocean compared with Japan’s big players (to put it in perceptive, a single washback at Yamazaki can hold over 100,000-litres).
The Chichibu 6 Year Old Single Cask Single Malt 2014 Abbey Release was distilled in 2014, matured for 6 years in 3rd fill Bourbon barrels and then bottled in 2021.
It was a special release for the inaugural Whisky Abbey Festival in the Abbotsford suburb of Melbourne.
