Description
Caballito Cerrero Azul is made with maguey Azul (Agave Tequilana Blue Weber), which is typically reserved for Tequila.
This is produced in Jalisco, which is Tequila-country, but this release is far from a Tequila in how it’s produced.
The agave are cooked in a brick steam oven, milled in a double pass mill, fermented in open stainless steel tanks with both wild and proprietary yeast, and distilled in stainless steel and copper.
